I don’t know who developed the base recipe for these miniature rays of confectionery sunshine, but whoever did it was most certainly inspired by God. Yes ma’am, yes sir, this place is gourmet gold. Let’s get down to it… Perhaps, in my opinion, most compelling thing about these cakes is the consistently perfect texture. When I first looked at one of the cakes, I expected them to be heavy and super sugary, like most bundt cakes I’ve had. Then I figured, if they were on the dry side, they might be crumbly. I was SO wrong. I’ve had some great tasting homemade cakes in my lifetime, but I haven’t really had any texture quite like this.
The cakes are not too dense — they have the perfect air-to-ingredient ratio. They have just the right amount of spring to them. The moisture content is perfect as well. The insides of the cakes seem to possess feathery tenderness. They feel so good in my mouth, I almost don’t care what flavor I choose. It’s like eating air (y’all know I tried it when I was young riding down the highway with my head out the window. So, I’m an expert.)
